Macaron Craze!

My scattered brain is tired of thinking about houses, so I took a break to make macarons!  What is a macaron, you ask...  Unlike the mounded pile of toasted coconut that I formerly associated with macarons, or macaroons, a macaron is a meringue cookie made from almond flour and egg white with a filling in the middle (usually buttercream or ganache).

Macarons are commonly known as "diva" cookies, since any deviation from the recipe causes problems.

Mixing

Ugly filling

Disaster macarons
The tops should be smooth and perfect, not wrinkly and sunken.   Perhaps this was caused by over mixing of the batter?  Or under whipping of the eggs?  Eh, divas.
